Now Guix setup grub.cfg in encrypted /boot/grub, but Grub needs it prior to decryption to know that it has to decrypt something and its path to begin with

So either the manual commands/instructions needs to be corrected accordingly to avoid that issue. Either I haven't understood correctly how Grub can work in that disposition, either I haven't understood the manual right and haven't applied right the instructions
